Well, here is a little somethin' somethin' that the husband and I tried out the other night for dinner. Crock-pots are a wonderful thing people. Throw it in and forget about it. At least, that's what I do. So, here is some crock-pot fun for those of you that enjoy that kinda' thing.
Our Version of Taco Time
What you will need:
1 package of Chicken breast (we use organic meat)
1 can of diced tomatoes
1 can of black beans
1 package (or to taste) of fajita or taco seasoning
Red Onion (chopped)
Yellow Bell Pepper (chopped)
Tortillas (we use low carb for my blood sugar)
Cheese, Sour Cream...(what you like on your tacos)
How to Do it:
This couldn't get any easier. Take your thawed chicken and combine it with the tomatoes, black beans, onion, pepper, and seasoning to the crock-pot. I cooked mine on "high" for about an hour and a half. This may vary depending on the thickness of your chicken and your crock pot, of course.
When the chicken was completely cooked I just used a fork to "shred" up the meat in the pot.
The mixture will have some liquid in it because of the tomatoes. We used a straining spoon to scoop it out on to the taco shells.
Add cheese and sour cream....or whatever you love on your tacos!
